Funfetti Cupcakes | Recipe

Hello! I've been dying to make these for quite a while now, they look so fun and very instagrammable. These are good for children's parties, as gift, or because you don't need to justify something this awesome!

Ingredients
125g caster sugar
125g butter
2 eggs
125g flour
1/4tsp bicarb
1tsp vanilla extract
1 1/2tbsp milk
Funfetti (Put in how much you want!)


Recipe
Oven fan 160°C, or normal 180°C
Put 12 cases into a muffin tray
Cream together the sugar and butter
Whisk in the eggs
Slowly mix in the flour and bicarb
Add vanilla extract
Mix in milk until cupcake batter consistency
Add a small handful of funfetti
Spoon into cupcake cases
Bake for 15 minutes


Icing
Ingredients
125g butter, softened 
280g icing sugar (powdered sugar)
1-2tbsp milk
1tsp vanilla extract
Funfetti to sprinkle

Whisk butter for a few seconds
Whisk in icing sugar
Stir in milk and vanilla extract until thick but spreadable 

Ice cupcake, spread with a knife and add sprinkles. Repeat.

Spiced Apple Tray Bake (Mary Berry) | Recipe

Hello! we've crept into September and... its my birthday month, the start of Autumn, my favourite season. Roundabout now Apples are in season, so this is the best time to make anything with apples in. Here is a recipe for a delicious Apple Tray Bake, from 'Mary Berry Cooks the Perfect'.


Ingredients:
225g butter (soft)
550g cooking apples (fairly thinly sliced)
juice of 1 lemon
225g muscovado sugar
300g self raising flour
2tsp baking powder
1tsp Ground Cinnamon (you can use however much you like to taste)
4 large eggs
1tbsp milk
Icing Sugar to dust

Preheat Oven to fan1960/360F/Gas 4.
Line and grease a 30x23cm fairly deep tin.
Cover sliced apples in lemon juice to preserve them and add more flavour.
Whisk together the 'cakey' ingredients for about 2 minutes.
Pour half the mixture into the prepared tin. Place half the apples on top. Repeat.
Bake for 40 minutes.
Leave to cool for 10 minutes.
Turn out cake onto a cooling rack.
Once cool dust with icing sugar and cut into pieces.

Salted Caramel Cupcakes | Recipe

Hello! Welcome to another baking post. I feel Salted Caramel is very trendy right now, and so it should be its delicious. After ALOT of browsing of recipes on the internet, I think I've found a good one, its from the Hummingbird Bakery.


Cupcakes
Ingredients
70g softened butter
170g plain flour
250g caster sugar
50g cocoa powder
1tbsp baking powder
1/2tsp salt
210ml whole milk
2 large eggs

Tinned caramel

Recipe
Preheat over to 150C Fan/170C/Gas Mark 3, line muffin tins with 12-16 cupcake cases.
Whisk butter, flour, sugar, cocoa, baking powder and salt until the resemble crumbs (note NOT like bread crumbs)
Mix together milk and eggs.
Gradually add milk and eggs combo to the dry ingredients, start by whisking slowly then speed up as the ingredients come together.
Once batter is smooth, pour into cases 2/3 of the way.
Bake for 20-25 minutes.
Remove from oven and cool on a cooling rack.

Use a sharp knife to make a hollow in the cupcakes.
Fill hollow with caramel.
Pop the tops back on the cupcakes.

Icing
Ingredient
670g icing sugar
210g butter, softened
70ml whole milk
30g tinned caramel
large pinch of sea salt

Recipe
Whist together icing sugar and butter be very careful to start with.
Add in whole milk.
Add in caramel and sea salt.
Whisk until light and fluffy.
Spread, of if you're super fancy pipe onto cup cakes.

Afternoon Tea

Hello! I have been wanting to host Afternoon Tea at my house for my friends for such a long while, then finally a couple of weeks ago I got around to it. Baking 3 different things turned out to be quite the juggling act, but despite the chaotic kitchen experience somehow all the bakes turned out fine #hallejuah! The Brownies were up there with the best I'd ever made, just the right balance of gooeyness, without being under baked. I used Vivianna's Lemon Drizzle Cake recipe, and they were so tasty. Finally I challenged myself to Macarons, there is an important note her... Macarons and Macaroons are not the same. Macarons are the pretty ones you see in french patiseries made with ground almonds, then Macaroons are made with Coconut. WHO FREAKING KNEW?



Brownies

For my Brownies I used the same recipe that I used to make my Creme Egg Brownies, recipe Here. I This time for decoration I just sprinkled ALOT of icing sugar on them, icing sugar makes everything look awesome! Can you see the darker layer of gooeyness, ugh perfection!

Lemon Drizzle Cake

I'm going to let you into a secret, I forgot to add the baking powder, I thought my life was over pretty much but they turned out fine so there was no need to worry at all. I think this is my new favourite recipe for Lemon cake, the sponge was so soft and springey, and ooh the lemony goodness was just spot on for me.

Macarons

I made these bad boiis in the evening, I was not in the mood, I had the ingredients so I pulled through. The making of the mixture was fine, it was frustrating trying to get all the little halves to look the perfect shape, so I went a more mishapen look to all of them. The really difficult bit was sandwiching them together, they were just so flimsy and breakable; this was not helped by catching up with Bake Off as there tenseness and panic was rubbing off on me a little bit. Recipe wise I used a few different ones as mixed them up, but I just googled Macaron Recipe and some came up, so if you fancy making them find a recipe that works for you!

At the end pretty much everything was gone, a sign that it was well enjoyed by everyone!

Cake, cake, cake

Hello! As you can see in my little info section I have said I love baking. In this post I am going to show you bakes which I have made in the last year. I don't bake as often as I would like to because I am very good at piling on the pounds!!

My First Bake - Fruit Flan. I made this in one of my first food tech lessons all the way back in year 8. It wasn't that amazing, buy hey here you go!

Battenburg Cake (this icing was rank, but looked cool) 
My nan's birthday cake from this year.
Red Velvet Cake (first attempt) this is not a pretty sight, but they tasted okay.
Just some cute buns
EASTER CAKE! This has to be my most ambitious design to date, and was made totally on whim, due to boredom.
Ombre cake. I was quite pleased with this one. But round the back there's a bit of naked cake where I ran out of icing oops.
Victoria Sponge, I didn't have any icing sugar :/
Chocolate Brownie Cake, ooft heaven on a plate omnomnom <3 p="p">
Bakewell cupcakes, these were made on The Great British Bake Off by Hollie last year and they were delicious!!

Cute Cakes


When it comes to my Birthday Cakes, I design them myself, and a local bakery makes up my design into a cake. Last year I had a Cath Kidston themed cake which was amazing, somehow this year I have to better it.

For some reason this hasn't come out clearly but you get the idea!!

Now I just have to decide how I want my cake to end out! Do any of you design your own birthday cakes??
